Guilt Free Chocolate?

Being a part of the Superfoodio team has exposed me to so many amazing ingredients I would never EVER have even thought of using and that is definitely one of the best parts of the job. However, cacao was not an ingredient that I had to be asked to experiment with it…funnily enough! I use it all the time in smoothies, porridge, banana breads, energy balls and much more! When I first used it I was completely shocked about how easy it was to make completely and utterly guilt free treats that I could snack on without a care in the world.
One of my favourite recipes that I made for them was this delicious chocolate bark. I scattered banana chips, desiccated coconut and pumpkin seeds on top but really you can top it with whatever you want or mix in anything at all. I tried a recipe that mixed in pomegranate seeds and it was so yummy, even better I think if you used freeze-dried raspberries as well.
Anyways, that’s the best thing about this recipe is that you can make it with whatever you want or have in your cupboard and it is ready in less than half an hour and will store for ages as long as it is kept in the freezer, where it happens to taste better as well.

Guilt free coconut bark
Cooking time: 10 minutes
Preparation time: 10 minutes
Makes: 1 small baking sheet of bark
40g almonds
120ml coconut oil
4tbsp cacao powder
60ml maple syrup
1tsp vanilla essence
20g desiccated coconut (plus extra for sprinkling)
30g banana chips
Pumpkin seeds for sprinkling
1) Place the almonds on a baking tray and place in the oven for 5-10 minutes until lightly golden at 180 Celsius
2) Combine the melted coconut oil with the cacao powder, maple syrup and vanilla essence
3) When the almonds are done remove them from the oven and chop them roughly
4) Add in the almonds and the desiccated coconut to the chocolate mixture
5) Prepare a baking tray with baking parchment and pour the chocolate mixture onto the tray
6) Top with the crumbled banana chips, extra desiccated coconut and pumpkin seeds
7) Place in the freezer until hardened
8) Take out and break into pieces and enjoy immediately
9) If not store in the freezer as it will melt!
