Bibi's Turkish Eggs

Another amazing meal at this Dublin cafe, Bibi's, is the Turkish eggs, especially with a fresh loaf of sourdough!

The yoghurt is the same as the Butternut Squash eggs but the chilli butter on top is slightly different so have a go with this one!

I haven't got a photo of the Turkish Eggs so instead here is a picture of the delightful seaside village Howth (Hoooth) which, just a train journey away from Dublin.

This makes a large batch of the butter to pour on top but feel free to adapt the quantities.

225g Salted Butter

2 cloves garlic, grated

5 spring onions, sliced

Handful coriander

Handful mint

3 teaspoons Hot Chilli Powder

3 teaspoons Sweet Paprika

Eggs

Greek Yoghurt

Lemon Zest

Garlic

  1. Blitz together the melted butter, garlic, spring onions, coriander, mint, chilli powder and paprika

  2. Poach the eggs with lovely running yolks

  3. Whilst the eggs are poaching combine the crushed garlic and lemon zest with the yoghurt and some salt and pepper

  4. Place the yoghurt in the bowl, then add the poached eggs and finally drizzle over the chilli butter
